— An heirloom bean cocktail recipe

Yellow and purple Mar-bini

I’ve experimented with many bush and pole bean varieties. When I saw Beurre de Rocquencourt seeds at a local nursery, they sounded too snooty to resist. I knew they would look good growing amidst the Trionfo Violetto purple pole beans (whose origins sounded equally ostentatious) that had just sprouted in my garden. This could be the beginning of a cocktail with a very good pedigree.

Eye-opening secrets of the heirloom bean

Carrots usually take all the credit for supporting eye health, but Beurre de Rocquencourt heirloom yellow beans quietly boast their own arsenal of eye-loving nutrients. Ample levels of both lutein and zeaxanthin in your eye tissue has been linked to enhanced vision, particularly in low-light conditions or situations with excessive glare. Lutein and zeaxanthin, found abundantly in these beans, give carrots a run for their money.

Bean there, done that, got the heirloom bean

Heirloom beans refer to varieties that have been passed down through generations within a family or community. These beans are untouched by genetic meddling or hybridization. Beurre de Rocquencourt heirloom yellow beans trace their roots all the way back to a quaint region near Versailles, France. Who knew vegetables could boast a fancier family tree than most of us.
